Spirals with jam

Su-per bu-ne, super simple! The dough is very easy to make, does not require leavening time and is very fragile.

  • 250g cow's cheese
  • 2 eggs
  • 100g old powder
  • 100ml oil
  • 400g flour
  • 1 sachet of baking powder
  • 300g harder sour jam

The cheese, oil, sugar, eggs and a pinch of salt are mixed in a tall bowl until well blended (I used a wooden spoon because Adrian was sleeping).

Gradually add flour mixed with baking powder and knead a lightly elastic dough (5-10 min).

Spread on the board lined with flour a sheet of about 1cm.

Grease with jam, roll lightly and then cut the slices of about 1-1.5 cm (cut a little harder, press the knife blade on the dough, then give the round shape when you put them in the tray).

Bake in the oven at 200gC for 15-20 minutes.

Serve powdered with sugar.

Necessary ingredients for the cake with oranges and cheese:

  • 100 gr melted butter
  • 1 pinch of salt
  • 300 gr cottage cheese
  • 150 grams of mascarpone
  • 100 grams of sugar (if you like sweeter add a little more sugar)
  • juice from a large orange
  • 4 sheets of gelatin
  • 500 ml orange juice (freshly squeezed or 100% natural juice)
  • 4 yolks
  • 2 tablespoons starch
  • 50 grams of butter
  • 50 grams of sugar
  • 8 sheets of gelatin

For decoration: whipped cream and chocolate ornaments

How to prepare cake with oranges and cheese:

Mix the butter with the sugar until it melts, then add one egg yolk in a row until incorporated. Slowly add the flour mixed with the baking powder and mix well. Beat the egg whites with the salt powder. At the end, with the help of a spatula, incorporate, at least once, the egg white foam into the dough. Pour the mixture into a form lined with baking paper and bake for about 20-25 minutes at 180 degrees until it becomes golden and firm to the touch. Let it cool then cut it in 2.

Meanwhile, prepare the cream cheese: mix the sweet cheese with the sugar and then with the mascarpone cream. Melt the gelatin in the orange juice, then pour it over the cheese and mix. We place the cream cheese over one of the tops, and we put the other one on top, we put the cake in the fridge.

Now it's time to make the orange cord (cream): Soak the gelatin. Heat the orange juice, beat the yolks with the sugar until they turn white, then add the starch and mix well. When the juice is hot, without boiling, add the yolk mixture and stir all the time until it starts to thicken. Take it off the heat and add the butter, mix well and then add the gelatin sheets one by one, mix well. Let cool for 10 minutes.

Now take the cake from the fridge and cut 1.5 cm around it, as even as possible and put it back in the baking dish so that there is an equal distance between the edges of the tray and the cake, for the orange jelly. The cake should not exceed the edges baking form (height). Pour the orange jelly and immediately put in the fridge. The jelly should cover the cake completely above). Let it cool for at least 4 hours.

We decorate it with whipped cream and chocolate ornaments, then we serve it. Good appetite!


Serious Issues

We need: 250 g spiral pasta (rifles), 2 tablespoons breadcrumbs, 3 tablespoons walnuts, 3 tablespoons brown sugar, grated lemon peel, a teaspoon of cinnamon, 50 g butter.

1. Combine milk with sugar and dry yeast. Set the mixture aside for 10 minutes to activate the yeast.

2. Put the flour in a large bowl and pour the yeast milk in its center, followed by butter, egg, oil and salt powder.

3. Knead the dough for at least 10 minutes, and if after 3-4 minutes it does not become finer and stickier, add more flour little by little.

4. After 10-12 minutes of kneading well, put the dough in a large bowl, covered with cling film and leave it to rise for at least 2 hours, or until it doubles (at least!) Its volume.

5. When the dough has risen, knead it for another 5 minutes on the worktop sprinkled with flour.

6. Then cut it in 2 and spread each piece of dough one by one, in a thin sheet.
